The Beginning
Brontë Restaurant is named after the beach just south of Bondi in Sydney, Australia — a stretch of sand beloved by those who know that the best things in life rarely announce themselves loudly. It's the kind of place you discover, then return to again and again.
Chef Wade Watson brings that same philosophy to his first fine dining concept in the Philippines. Named as a nod to the literary Brontë sisters as much as to the coastline, the restaurant opened at the Levanto Building on Jupiter Street, Makati, in 2026 — the culmination of a vision Watson had been building across his career.
Partnering with Derek Ramsay, Watson created a dining experience that trades elaborate storytelling and culinary theatrics for masterfully cooked Australian beef, timeless dishes, classical desserts, and a wine program built for serious enthusiasts. He'd already proven the concept with Bondi & Bourke — but Brontë takes it further, into the realm of genuine fine dining.
