Our Story

Born From a Fire and a Very Good Chef

Named after the beach just south of Bondi, Brontë is chef Wade Watson's first fine dining concept in the Philippines — a culinary love letter to Australia, reimagined for Manila.

Partnering with Derek Ramsay, Chef Wade has created a space that trades elaborate theatrics for masterfully cooked food: premium Australian beef, timeless classics, and a wine program built for serious enthusiasts.
